and i’m not a superlative girl,
so forgive me for
doing what some food bloggers
are guilty of:
extolling the virtues
of said food item with
an over abundance of
enthusiasm
and eye roll inducing
saccharine drivel.

instead,
let’s just focus on
how i treat these treats
like they’re both
a breakfast item
AND
dessert.

it’s like starting
and ending
my day correctly,
which,
let’s be honest here,
is the best kind of amazing.
superlatives for the win.

Blueberry Swirl Muffins

Blueberry Swirl Muffins – dairy free
adapted from Honestly Yum, who adapted it from The Cook’s Illustrated Cookbook

makes ~16 muffins

Ingredients
2 cups blueberries​, divided​
1 cup sugar
2 1/2 cups whole wheat flour
2 1/2 tsp baking powder
1 tsp salt
2 large eggs
1/4 cup coconut oil, warm/liquid
1 container (6oz) plain vegan yogurt, i used almond dream
1/4 cup almond milk
zest & juice of 1 lemon

Streusel Topping
1 1/2 TBL sugar
1 1/2 TBL brown sugar
pinch of salt
1/4 cup whole wheat flour
2 1/2 TBL warm ​coconut oil

in a small bowl make the streusel topping by combining everything and mix evenly. set aside.
in a small sauce pan reduce 1 cup of blueberries, mashing with a fork and stirring. you want the berries to break down, the sauce to be thick. strain through a sieve if you’re not keen on the skin/pulp. set aside and cool to room temp.
line muffin tin with silicone/paper liners.

preheat oven 425F.

in a mixing bowl whisk the flour, baking powder, lemon zest and salt. in another bowl whisk eggs + sugar until thick and then add in the coconut oil, yogurt, almond milk and lemon juice. now combine the liquid to dry ingredients, with the remaining blueberries. throw in an extra handful if you’re feeling sassy. (i felt sassy). the mixture will be all sorts of fug, but try not to overmix.

fill muffin cups a little over 3/4 way up, these will expand/rise. (HonestyYum filled it up all the way but i didn’t want any overfilling accidents and having to clean it up. that would’ve been a superlative pain in the ass.) spoon about a teaspoon, more or less, of the reduced blueberry sauce on top of each muffin. use a toothpick or some stick-like kitchen tool and swirl the sauce into the batter. finally, top with streusel topping, amount at your discretion.

i was able to eek out 16 muffins with just enough sauce & steusel.

bake 17 minutes​

remove from oven, allow to cool for a few minutes and then remove from pans to cool completely.

will keep for a week, covered, in fridge.

Blueberry Pie Smoothie

now that the summer
is beginning its wind down
— the days being cooler
— the nights dipping into the 60s
and i can’t decide if the
AC should be kept on or turned off,
we’re finally getting our groove on
with smoothies
and we’re gonna shut the shop down
in a few short weeks
because i don’t want to start
the day freezing my ass off.
figures, right?
it’s a lush time
of ripe peaches
precious leftover blueberries
i’m already lamenting about autumn
and we still have a good 2 months till then!
i’ll shut up now.

last week we picked up running again.
my goals remain the same:
– run safely, no injuries for this girl.
– finish. it may not be pretty but get it done.
after our first run
dw introduced me to a new juice/vegan/hippy/smoothie joint
it is now my new jam
and this smoothie was inspired by them.
(i will admit
that i’m pretty sure i’m negating my run
by consuming their smoothies
but i don’t care.)

Blueberry Pie Smoothie

makes 4 cups, serves 2-4, depending on how generous or stingy you are

note: i didn’t exactly measure everything. it’s all about consistency, how thick or thin you like it. the first time i made this, i used kefir milk (which, btw, is 99% lactose free and i’m able to consume it without wanting to die. WIN!) and for this post, i kept it all vegan. if you don’t have a blueberry pie hanging around, make with fresh blueberries + honey granola or an oatmeal cookie.

2 slices of blueberry pie
1 container of vegan yogurt (6oz), i used Stoneyfield’s O’Soy Yogurt in vanilla
1 cup vegan milk (more or less…), i used almond milk
handful of ice, optional

if you plan this ahead well, make almond milk ice cubes.

in a vitamix, put in the pie slices and vegan milk. whiz until well blended. add the yogurt and whiz some more.

at this point, it’s ready for consumption. it might be thick so you could eat it with a spoon.

you can thin out with more milk (or water). i like to add ice cubes. dw typically doesn’t drink his smoothie until about an hour after i’ve made it, when he’s sitting at his desk at work so the ice keeps it cool and thins it out a little.

either way, it’s delicious. i like the idea of having dessert for breakfast and having the entire day to burn it off.

our first sunday back
suffering from jetlag
i made this for supper,
at noon,
and because i was not feeling
in the kitchen mood
we had it for lunch the entire week

i’ve had this babka on my mind
for a long time
i made it for xmas
and so i made it again for easter
this time
for individual consumption
mini-versions, if you will,
cus why not
cus who doesn’t like mini stuff

for 3 hours individually rolling

i will list my alterations:

organic spelt flour
earth balance soy margarine to keep it dairy free and pareve
cinnamon in the dough and sprinkling in the filling
half the dough was then divided into EIGHT sections which were then rolled, filled, & twisted into mini loaves
the other half was rolled and then cut into TWELVE rolls that were then baked in muffin tins

bake times ranged from 20-25 minutes, please keep an eye. my oven runs hot, next time will be a hard stop at 20 minutes

i declared ridiculous things
like,
it’s so easy, anybody can do it
it’s the best thing, in the world
and the worst:
i’m never buying bread at the store again
the me today would’ve slapped the me then
because that shit’s just silly

i don’t have a kid,
i have a husband
our weekends are usually jammed packed
with social things
like,
wandering the mall before a matinee
and deciding to kill 30 minutes
playing skeeball at Dave&Buster’s
or,
doing nothing
while we watch water boil
most weekend mornings
i spend feeling guilty
for sleeping in past 8am
or
berating myself for not taking advantage
of sleeping in time
it’s exhausting
who has time to bake fresh bread
with all that?

unless one’s husband is sick
and there’s much more time
to spend in the kitchen
and there’s a work event
that requires some smug-like
bread baking —
then bread is made

Pull Apart Bread

pull apart bread – two flavors:
cinnamon sugar + citrus love (dairy free)
adapted from Baking for All Occasions by Flo Braker

note: these loaves were made weeks ago, when dw was super sick and didn’t even get a chance to eat any. i will be making this again for him, eventually. my favorite combo was the cinnamon sugar but the smell of orange zest was very intoxicating.
also, these will puff out during baking so have the pans on a cookie sheet to catch any dough that may overflow. i learned this the hard way.

12 1/4 oz AP flour
1 3/4 oz sugar
2 1/4 tsp yeast
1/2 tsp salt
1/3 cup so delicious coconut creamer
4 TBL earth balance vegan butter, melted
1/4 cup water
2 large eggs, room temperature

filling
1/2 cup granulated sugar
zest of 2 large organic oranges
2 oz earth balance vegan butter, melted

OR
1/2 cup granulated sugar
2 oz earth balance vegan butter, melted
2 TBL cinnamon

cream cheese icing
3 oz tofutti cream cheese, softened
1 1/4 oz powdered sugar
juice of half an orange
splash of so delicious coconut creamer, if needed to thin

in stand mixer bowl, stir together 9oz of the AP, sugar, yeast and salt. in a saucepan, melt the coconut creamer and vegan butter on low, until butter is melted. add in the 1/4 cup water. aim for 120F – 130F.

pour the mixture into mixer bowl, stir with spatula. using the paddle attachment, and the mixer on low, add in the eggs, one at a time, mixing until just incorporated. add remaining flour and mix on low until dough is smooth, and slightly sticky. sprinkle counter top with a bit of flour, and turn dough onto it. kneed gently until dough is smooth and no longer sticky. place dough in large bowl, covered tightly with dampened towel, and allow to rise in warm place. (i usually turn the oven to warm for about 10 minutes and then put the bowl in, turning it off but keeping the light on.) it will double in size after about an hour.

meanwhile make the filling, melt the vegan butter. set aside. mix either the sugar + cinnamon or sugar + orange zest.

when ready, take the dough out and preheat oven to 350F. lightly grease a loaf pan.

gently deflate the dough. it will be sticky, dust the counter top with a bit of flour. roll out dough into 20X12 rectangle (honestly, i rolled it out to however long/big my counter space is, without the dough getting too thin. use your best judgement.) using a brush, spread the melted butter over the dough. sprinkle over top with either the orange filling or the cinnamon-sugar filling. with a pizza cutter cut the dough cross-wise into 6 strips, make it as even as possible, or not. carefully stack the strips on top of each other and then cut strips into 5 squares. lift the squares and fit them into the prepared loaf pan. filling the space might be tight lengthwise, i tilted the pan down and let gravity help. there will be space on either sides of the dough width-wise. fret not, the dough will rise again and fill out the pan during the final resting/rising period.

after the final rising, bake bread for about 30 minutes. transfer to wire rack and let cool in pan for about 10 minutes. after that time, i did slide them out to cool completely on the rack before putting them back in the pans for safe keeping.

to make the icing, mix the softened tofutti cream cheese with powdered sugar and squeeze of half an orange. mix until well incorporated. for a nice runny consistency, add a splash of coconut creamer, at your own discretion.

serve warm or at room temp.
i would think they’d last a few days, well covered, in fridge, but honestly, they were eaten up by my office coworkers in one go.

|| i’m walking around with glasses on because now that i’m married i don’t have to look cute i’m getting my eyes ready to get lasik surgery’d. i’m shitting myself scared so positive vibes please.
|| a few weeks ago, just before the polar vortex, dw & i sat down and marathoned the Following. the new season begins on the 20th and i’m already pooping myself scared. there’s a lot of scared pooping this month.
|| we finally booked our honeymoon, set for the spring, and I’VE ALREADY DONE CHECKED OUT. there’s still WEEKS till the trip and i’m useless in everything right now.
|| i am mad crocheting for a foodie penpal thing i signed up for way back in November, when i was in the thankful and gift giving mood, and now that it’s time to send stuff, i’m stresssssssed that my stitches suck. this is why i so rarely gift yarn stuff — because of the pressure!
|| our favorite local pho joint is shutting down for TWO MONTHS, to vacation in vietnam for the winter. the fact that winter is the best time to enjoy pho is lost to them; but i really can’t blame them because it’s hot as shit in the motherland. again, why do i not winter in the southern hemisphere?
|| i have been discussing the reasons why i am so not offended by the likes of one Miley Cyrus and how i have been listening to her new song over and over and over again, that i might as well just plop down good money & download her album. update: dw downloaded it for me! party in the USA… i don’t have a good respectable answer, i just know that i’d like to have brunch with her, while telling her that she needs to put her tongue back in her mouth and trim her finger nails.
